Spinach: ‘Bloomsdale’, ‘Giant Winter’
Kale: ‘Dwarf Blue Curled’, ‘Red Russian’
Chard: ‘Bright Lights’, ‘Fordhook Giant’
Direct sow seeds or start indoors. Lettuce and spinach: 4-6 inches apart. Kale and chard: 12-18 inches apart. Use succession sowing every 2-3 weeks for a continuous harvest.
Keep soil evenly moist. Use compost or balanced fertilizer at planting and mid-season to encourage tender leaves.
Pick outer leaves as needed or cut the whole plant. Store in the fridge in a perforated bag for up to a week. For longer storage, consider blanching and freezing spinach or kale.
